Breakfast
>Everything bagel with cream cheese
>3 maple sausage links pan fried
>2 brown eggs pan fried

Skip Lunch

Dinner
>Marinated boneless chicken thighs Shawarma style, pan fried with top on. Didn't have lemon juice for marinade, or yogurt sauce. Dish did take a small hit, but good otherwise.
>Deep fried seasoned curly fries in peanut oil
>Greek yogurt sauce with cumin, pepper, salt, minced garlic.

Will make sure I have lemon juice next time. That tang of the lemon really does impart a nice flavor, and add a little juicyness to the chicken. Still decent though.

Is serving food “piping hot” or just hot in general, just a big meme? I’ve found that in my own personal life, whether it’s dining out, or even if I’m picking up food for someone, everyone is obsessed with getting their food hot as possible and eating it the second it cools just enough to be edible.

But for me, I’ve found that everything, from fast food to home cooked meals to fancy restaurants… everything tastes better when it’s cooled down to room temperature. The flavor comes through better.

Sorry bud. I meant hot as in like literally temperature wise. Not as in spices or spicyness.
>>
>>20505163
anyone who cannot get all their cooked food items on the table/served piping hot has no business cooking.

I've been to several peoples houses or events where all the food is cold when you get it never went back.

was at a mexican restaurant a couple months ago and our food took way to long to be prepared, when we got it, it was all cold. garbage.

no it does not taste better when it has cooled down. you are retarded.
>>
It's certainly possible to have your food served too hot to eat, and it's always kind of a drag to have it there and not be able to touch it, but in general I greatly prefer my food hot. I always cringe when I order at a restaurant and then someone says "hey, let's take this back and eat it at home." No, let's fucking not, it will be lukewarm and all the tastes will have blended together by then.

I think the idea is that you can always wait for your food to cool after it gets to the table, but you can't heat it back up by staring at it if it arrives cold. Chef JP makes a point to tell viewers don't ever bother reheating/serving anything beyond 150°F as that's the limit of our mouth's temperature tolerance. Certain foods also lose heat rapidly and change markedly the second they are off-fire like anything with substantial fat/cheese content that begins to congeal and turns unpleasant. I personally found that above body temp (~98.6°F) things like soup are best in the 120-140°F range, and of course pre-warming the serving bowls/plates helps reduce thermal loss without having to nuke the food itself to give a time/temp cushion.

Last week I brined some cut roast for jerky in quart jars for 2 days
Dumped jars out in a collander over a bowl
Made beef jerky
Used brine on a couple chicken breasts for a couple days
Slow cooked chicken in brine for delicious shredded chicken
Once again strain the now stock/brine and shred chicken for various meals, first was crispy carnitas
Today use the stock/brine as a soup base for avgolemono with some of the shredded chicken and orzo
it is delicious

Tell me stories about not wasting ingredients at all and making meals from leftovers, etc

last year after thanksgiving I took the entirety of the leftover turkey, broke it down, tossed it into a big pot with water and seasonings and let that shit simmer and reduce for like 5 hours. Tada! Turkey dinner soup.
>>
>>20501177
Across how many days did this brine recycling take place? Also, for how long did you slow cook your chiken?
>>
>>20504704
1 week from making brine to eating the soup
simmered it for just under two hours and it shredded nicely and was still juicy. the days i'm brining i'm sure saved me some cook time by pre tenderizing
i'm wary of over slowcooking things because the meat ends up dry somehow... why most people's pot roasts suck
honestly brining just makes everything better. haven't tried on steak yet though...
>>20501211
this is perfectly what I mean. how does one lacto ferment things you drink, doesn't it require a salty brine?

>Does coming out a keg improve the flavor or something?
Different types of carbonation affect texture/mouthfeel, which is hugely important. If you ever doubt this, try drinking a "flat" beer (sitting open until all carbonation is gone), or even a flat soda for that matter. It's not even the same drink.

Hey /ck/, /fit/ user here.

This is my favorite chocolate milk but it's 5 dollars per small bottle so I wanted to recreate it myself. I noticed it uses alkalized cocoa powder and after I looked it up, turns out that's also called Dutch Cocoa Powder which is what my other favorite chocolate milk Bourden's uses.

So my question is, what's the best Alkalized Cocoa Powder I can add to milk to make Chocolate milk? I really like this Fairlife protein milk.

It's total ingredients are:
>Filtered lowfat grade a milk, alkalized cocoa, contains less than 1% of natural flavors, lactase enzyme, sea salt, acesulfame potassium, carrageenan, monk fruit juice concentrate, maltodexerine, ceullulose gel, cellulose gum, stevia leaf extract, sucralose, vitamin a palmiate, vitamin d3, contains milk.

I know that a lot of that stuff is artificial sweetener I could probably just replace with cane sugar, or healthy stuff added in for the protein. But what's the best way to recreate this masterpiece so I'm not paying out the ass for choccy milk?
