Is serving food “piping hot” or just hot in general, just a big meme? I’ve found that in my own personal life, whether it’s dining out, or even if I’m picking up food for someone, everyone is obsessed with getting their food hot as possible and eating it the second it cools just enough to be edible. But for me, I’ve found that everything, from fast food to home cooked meals to fancy restaurants… everything tastes better when it’s cooled down to room temperature. The flavor comes through better.

It's certainly possible to have your food served too hot to eat, and it's always kind of a drag to have it there and not be able to touch it, but in general I greatly prefer my food hot. I always cringe when I order at a restaurant and then someone says "hey, let's take this back and eat it at home." No, let's fucking not, it will be lukewarm and all the tastes will have blended together by then.

Chef JP makes a point to tell viewers don't ever bother reheating/serving anything beyond 150°F as that's the limit of our mouth's temperature tolerance. Certain foods also lose heat rapidly and change markedly the second they are off-fire like anything with substantial fat/cheese content that begins to congeal and turns unpleasant. I personally found that above body temp (~98.6°F) things like soup are best in the 120-140°F range, and of course pre-warming the serving bowls/plates helps reduce thermal loss without having to nuke the food itself to give a time/temp cushion.
